Potato Wraps with chips
Potatoes, Guacamole, Spinach, & BBQ Sauce

- sundried tomato wraps was great
- more bbq sauce needed than thought
- sweet baby rays famous bbq sauce
- good for lunches after, especcially if you make lots of potatos
- find a way to incorporate protien
Directions
Roasted Potatoes
- Preheat the oven to 425 degrees F.
- Chop 5 large red potatoes into square-like pieces and add to large glass bowl
- Add a tablesppon of olive oil
- Add 1/2 Tsp salt
- Add 1/2 Tsp Smoked Paprika
- Add 1/2 Tsp Chili Powder
- Add 1/2 Tsp Coriander
- Add 1/4 Tsp Cumin
- Mix well until potatoes are evenly covered
- Place on a baking sheet lined with parchment paper
- Bake potatoes for 17 minutes
- Stir
- Bake additional 17 minutes
- Make Guacamole if not using store bought
- Dice scallions
Putting It All Together
- Spread a layer of guacamole and barbecue sauce on the tortilla
- Then, add a layer of spinach
- Then a layer of scallions
- Finally, add on the potatoes and wrap it up.

- 1 avocado or premad Guacamole
- BBQ sauce

- Scallions
- Chips
